“Here’s how to eat an oyster,” Peter said. He took the half shell in his hand, scraped the oyster free from it, and then ladled a teaspoon of red wine vinegar over the oyster. He took a teaspoon of finely minced shallots and spread them on top. Then he raised the shell to his lips.

“Now you just suck it down,” he said with an embarrassed chuckle. And he did. In one gulp, followed by a beatific smile signaling his enjoyment of the taste. “Yum. These are the best oysters I’ve ever had. You can almost taste the ocean. Now, your turn.”

Elizabeth watched with nervous anticipation as Peter picked up another oyster and went through the same careful preparations.

“I thought we’d try the baked ones first,” Elizabeth said.

“You’re thinking of Oysters Rockefeller, also excellent, but oysters this fresh should be enjoyed raw.”

Peter held out the oyster resting on its shell. Elizabeth looked at the oyster nestled within its pool of vinegar and blanched.

“Come on,” Peter goaded. “You’ll love it, I promise.”

Elizabeth leaned forward as he raised it to her lips. She squeezed her eyes shut as she opened her mouth and let the oyster slide in. She swallowed it before she could think any further.

And then she surprised herself by laughing out loud. “You’re right, it’s wonderful! I don’t think I’ll ever get used to that sensation, but the taste is incredible.”

Peter beamed, and they spent the next thirty minutes finishing the plate of oysters before moving on to share another classic, steak-frites.
